they can be bonded to each other and if bonded well they may copulate if one is female, and the female will lay eggs but the eggs wont hatch and will be infertile.
The reason is because their DNA isnt compatible with one another.
however it is possible but not likely and african grey can breed with an UN-Cape parrot of similar size and DNA only a few times in aviculture has this occured
you yellow headed amazons DNA is compatible with any amazon specie. ie if you bred you yellow head with a yellow nape or blue front, young will be produced and they will be hybrids, and capable of having children as well.

They can't produce offspring. There have been instances where two very different species of animal were mated very successfully, and produced sterile hybrids. Given the low likelihood that a Grey/Amazon mating would produce a hybrid--a "Gramazon"--it's much more possible that the two who are in love will nest and produce sterile eggs.
I would recommend candling all of the eggs produced. They probably are unfertilized, laid without copulation just by the female. You seem to want to keep these two together, so while you're doing your pet care routine, check all of the eggs under a light (careful about the heat, though).
Eventually, for all of your curiousity, you may end up with a fertile egg between the two of them after all. It's happened in wild birds, before. It happens in Ocelots all the time. no They may mate, but I doubt that they would produce any fertile eggs. They wouldn't be closely related enough to produce hybrids.
