Bulls are at least partially color blind, so it's not the color red that makes them react, it's the motion of the cloth that bullfighters wave in front of them. Why do bullfighters generally choose red? Maybe because it's more dramatic than say, the color brown. Also could serve to hide the fact that a bullfighter has been wounded. Not sure about that one though. becaues that is the color of blood! They don't the action of the cloth annoys them and they charge at it. They don't, they react to the movement. The cape or w/e they use is only red for the audience. It's actually actually sort of a myth. In bullfighting the bullfighters use bright colored capes to disorient the bull. So down the line people started to assume that bulls will charge anything that's red.
