Put it back where you found it! Quick! NOW! Different types of turtles eat different things, also they require different setups depending on the kinds of turtle it is. If the turtle doesn't look hurt or sick your best bet would be to let it go where you found it. Most pet stores have turtles you buy for a pet, and you would know then the kind of turtle you are dealing with so you could properly feed and take care of it. If it is sick or injured your local wildlife center should be able to take it in and take care of it. greens, melon rinds. Would let it go time of the year for it get ready to hibernate if your not gonna eat it let it go it will die, your iterfering with the cycle of life for a turtle it will be looking to hibernate soon. you wont believe this, but when i was a kid my turtle loved chipped ham. Return the lil' fella to it's natural habitat. It's not your property. Depends on the kind of turtle, some are more carnivorous and others are largely herbivorous. but you REALLY should let it go. Turtles do not make good pets for a majority of people. They eventually need very large (and relatively expensive) setups to thrive. My guess is you caught a red eared slider or painted turtle. Are you ready to potentially deal with a turtle the size of a dinner plate? PLEASE let him go, he will be much happier. And I'd do it soon before the weather turns colder.
If you insist on keeping him, first identify what kind he is, then you can determine what sort of care he needs. I recommend this site: http://www.allturtles.com We have had turtles for 4 years now. They can eat regular fish food flakes but it's not the best for them. You can feed then chopped up cellery but they also sell reptile food for them at the pet stores and walmart. Human Beings!
